Roast Beef Wrap


Ingredients:

Sliced roast beef
Whole wheat tortillas
Mixed greens
Chopped tomato
Dijon mustard
Blue cheese crumbles

Directions:

Heat the tortillas in the microwave for a few seconds to warm and soften. I like to warm the beef as well. Arrange the beef slices down the center of the tortilla, then add the other ingredients and fold.

Simple Side Dish:

Ingredients:

Large beefsteak tomatoes
Olive oil
Balsamic vinegar
Salt and Pepper

Direction:

Slice the tomatoes and place them on a baking sheet. Drizzle with olive oil and vinegar. Season with salt and pepper. Broil for 3-4 minutes.
