Chinese Beef and Pea Pods


(CROCK POT)

Ingredients:

1-1 1/2 pounds flank steak, sliced thinly
1 can condensed beef consommé
1/4 cup soy sauce
1/4 teaspoon ground ginger
3 bunches (or more) green onions, sliced
2 Tablespoons cornstarch
2 Tablespoons cold water
2-7oz packages frozen Chinese pea pods (OR use 1 pound fresh pea pods)
Hot, cooked rice

Directions: Combine steak in crock-pot with beef consommé, soy sauce, ginger, and onions. Cover and cook on LOW for 5-7 hours. Turn crock pot on HIGH, and dissolve corn starch in cold water; add cornstarch mixture to crock pot and cook 20 minutes. Drop in thawed pea pods the last 15 minutes. Serve over hot, cooked rice. Makes 4-6 servings.
