2 Cornish game hens
Salt
Pepper
Orange Glaze (below)
Rinse hens and pat dry. Season with salt and pepper inside and out. Place in baking dish or shallow roasting pan. Bake at 350 for about 15 minutes, then baste with enough glaze to cover hens. Bake about 2 hours total, basting frequently with glaze. One adult serving can be about one-half of a hen. Makes an easy, elegant dinner with Brown Rice and Upside-Down Orange Rolls.
Orange Glaze
1/3 cup brown sugar (packed)
1/3 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon grated orange rind
1 cup orange juice
¼ teaspoon salt
Place all ingredients in small saucepan and whisk until well mixed. Cook on medium to medium-low heat, stirring constantly, until sugars dissolve. Simmer until transparent and thickened, about 3 minutes.
