Lu'Pulu


Lu’PuLu (Lou’Poo Lou)

From the island of Tonga in the South Pacific

6 boxes frozen chopped spinach, thaw and squeeze water from it
Lay spinach in bottom of a small casserole dish.
Take 2 cans of corned beef and crumble over spinach.
Sprinkle with garlic powder, salt and pepper.
Add sliced onion and tomatoes.

In a bowl wisk together:
2 cups mayonnaise
¼ cup milk
1 tablespoon coconut extract

Pour over dish and cover with foil.
Poke holes in foil with a fork.

Bake at 350 degrees for 2 hours.

Serve with yams or white rice.
