Rice Broccolli Casserole


Ingredients:

• 1 c. chopped onion
• 1 c. chopped celery
• 4 tbsp. butter
(8 oz. Sliced mushrooms, optional)
1-1/2 to 1-3/4 c. uncooked rice, cooked according to package directions
2 packages frozen chopped broccoli or 1 16 oz. frozen bag, cooked according to directions and well drained
1 can cream of mushroom soup
1-8 oz. package sharp cheddar or mozzarella cheese, shredded
Salt and pepper to taste


Directions:

Saute onion, celery and (opt.) mushrooms in butter.
Mix all ingredients together and put into a buttered long Pyrex casserole dish. Bake 25-30 minutes at 325 degrees.
