Ingredients:
1 can of black beans, rinsed
1 package of frozen corn
1 red bell pepper, diced
¼ cup diced red onion
Cooked chicken breast, cut into cubes (optional)
¼ cup mayonnaise
¼ cup sour cream
½ cup chopped cilantro
1 tsp. lime zest
3 TBSP lime juice
½ tsp ground cumin
¼ tsp ground red pepper
¾ tsp salt
Serve on bed of lettuce or with tortilla chips.
