Clam Chowder


serves 6-8

Ingredients:

2 cans minced clams (or more if desired)drain and keep liquid
1C celery, chopped fine
1C onions, chopped fine
1/2 c carrots, chopped fine
2C red potatoes cubed (or more if desired)
3/4-1C flour
3/4 C butter
1 QT half & half (or if you really want a rich soup, use heavy cream
to taste. And it tastes so goooood)
1/2 tsp sugar
1 1/2 tsp salt


Directions:

Dice veggies and cook for 20 mins in clam juice and enough water to
cover. Add salt and pepper

In another pan melt butter, add flour and stir until thickened and
smooth. Add half & half until thickened. Add mixture to veggies and
cook 'til hot, BUT DO NOT BOIL.
If you like a thicker broth, add instant potatoes or more flour,
mixed smooth in a little water.
