Almost Fresh Salsa

So good as a dip with tortilla chips!

2 15 oz. cans whole tomatoes undrained or diced tomatoes drained

1/2 cup diced red onion

1/2 - 1 bunch cilantro, chopped

1/2 - 1 anaheim or jalapeno pepper, diced

2 cloves garlic, minced

1 Tbsp. lemon juice

salt to taste

Blend all ingredients in a food processor. Keeps in the refrigerator for up to 2 weeks.
