Hamburger Soup

(CROCK POT)

ingredients:

1 pound lean ground beef
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon seasoned salt
1 envelope onion soup mix
3 cups boiling water
1 (8-oz) can tomato sauce
1 Tablespoon soy sauce
1 cup sliced celery
1 cup sliced carrots
1 cup COOKED macaroni
1/4 cup grated Parmesan cheese
2 Tablespoons chopped fresh parsley (if desired)


Directions:
In large skillet, brown beef; break up large chunks with fork. Pour off excess fat and crumble cooked beef into crock pot. Add pepper, oregano, basil, seasoned salt, and dry soup mix. Stir in water, tomato sauce, and soy sauce; then add celery and carrots. Cover and cook on LOW for 6-8 hours. Turn crock pot to HIGH. Add cooked macaroni and Parmesan cheese. Cover and cook on HIGH for 10-15 minutes. Sprinkle with parsley just before serving. Serve hot. Makes 5-6 servings.
(I always double this recipe when I make it… it makes great leftovers!)
