2 cups cooked chicken breast, chopped
1 box of penne pasta
8 oz. mushrooms
1 cup or so cooked, crumbled bacon
Handful of chopped green onions
1 cup frozen peas
2 Tbsp or more of olive oil or butter
Sauce:
½ cup butter
½ cup cream
¼ cup grated Parmesan cheese
Dash of salt and pepper
Cook pasta. Heat olive oil in pan and add mushrooms. Sauté till soft, then add peas for a minute or so, then green onions. Prepare sauce by heating butter and cream in saucepan over low heat. Stir until butter is melted, then add cheese, salt and pepper. (You may want to make more sauce, depending on amount of pasta and your liking). Combine pasta, mushroom mixture, and bacon. Pour sauce over pasta; toss and serve immediately.
To Freeze: Cook pasta 2minutes less than the shortest recommended cooking time.
To serve from freezer: Thaw and heat. You may need to add butter and/or milk or cream to reconstitute the sauce.
