Salad De Maison


SALAD DE MAISON

Juice of 1 lemon ½ tsp pepper

1 clove garlic, crushed 2 c. cherry tomatoes

2 heads romaine lettuce 1/3 c grated Parmesan cheese

1 c. coarsely grated Swiss cheese ¾ c vegetable oil

1 c. croutons ¼ lb. bacon, diced

1 tsp. salt 2/3 c. slivered almonds

    Saute diced bacon until crisp. Drain on paper towels, In a salad bowl, combine the following ingredients: Romaine lettuce (torn into small pieces), cut cherry tomatoes in halves and add, Swiss cheese, lightly toast almonds and add, then add the bacon pieces. Toss the salad with the dressing and Parmesan cheese. Garnish with croutons.

The Dressing: Combine lemon juice, garlic, salt, and pepper. Beat continuously with a fork while slowly adding vegetable oil.. Let the dressing stand at least 3 hours before serving. Yield: 8 servings.
